Healthy Halloween Snack: Easy Monster Hummus

We LOVE spooky season around here. What we don’t love? All the treats that are high in sugar that make eating healthy around the holidays well...tricky! 
 
Enter FitPro (and mom extraordinaire) Claire to save the day. Her healthy and easy monster hummus is perfect for getting the little helpers in your life to join in on the food prep. Plus, what mom can say no to a recipe that makes eating fruits and vegetables fun?! 
 
This healthy Halloween snack is perfect for your kiddos, your Halloween party...or even as a festive treat for yourself. Whip this up in less than 20 minutes for a scary good snack! 

Ingredients:

15 oz can of chickpeas rinsed
1/3 cup tahini
Juice from 1 lemon
2 cloves garlic finely chopped
1/2 teaspoon sea salt
2 tbsp extra virgin olive oil
2 tbsp water (more or less for desired consistency)
Handful of spinach for color!

Directions:

• Drain and rinse your chickpeas. If you have little helpers you can have them peel the skins, but it's not necessary. Set chickpeas aside.
• In a food processor, blend lemon juice and tahini until it's frothy – this makes your hummus creamy!
• Add salt and garlic and blend again
• Add chickpeas and blend again
• Once the chickpeas are completely blended, add water, extra virgin olive oil and your spinach and let it blend for a few minutes until the consistency is just right!
 
Serve with fruits and vegetables of your choice. FitPro Claire used blackberries, cucumbers, clementines, carrots, bananas and candy monster eyes for her little ghouls and goblins!

Add cucumber “stems” to the clementines to make them look like mini pumpkins!
