Cool Recipes for Summer

Hot summer weather leaving you feeling hot, sticky and tired? Not to worry. These invigorating, healthy recipes can help cool you down. Try these fresh salad and drink ideas to beat the heat.

Fresh salads are crisp and juicy low-calorie meals, plus they’re a great way to use what you have on hand. Toss baby mixed greens with:
  • Lean deli meat, canned tuna, cubed tofu or beans.
  • Add vegetables such as shredded carrots or diced bell peppers, cucumbers or tomatoes.
  • Combine edible flowers such as marigold or nasturtium with fresh herbs including parsley, thyme or dill.
  • Add fresh fruit for a delightful sweet surprise.

Homemade dressings have less additives, better flavor and are more cost effective. In a pint-sized mason jar, add the ingredients in this recipe:
  • 2 tablespoons of your favorite vinegar
  • 2 teaspoons Dijon mustard
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste
  • Shake and store leftovers in the refrigerator for up to one month.

Refreshing drinks put your fire out while dousing your body with essential vitamins and minerals. Try these drink ideas. 
  • Dice watermelon and puree in a blender. Strain seeds out and add water to reach desired sweetness.
  • Crush 1-inch of fresh ginger root and add to 4 cups of boiling water. Steep for 15 minutes, strain and cool.
  • Unflavored coconut water is low in calories and high in potassium and electrolytes.

Smoothies are a wonderful way to cool down and can make a light meal. Sweeten with frozen fruit, which adds fiber, antioxidants, vitamins and minerals. 
  • Silken tofu adds protein and a creamy texture.
  • Avocados add richness and healthy fats.
  • Greens such as kale, chard or spinach have anti-inflammatory benefits.

Granitas are slushy fruit-based desserts that are easy to make. Try this granitas recipe:
  • Pour 2 cups of liquid into a baking pan, freeze for one hour and scrape with a fork. Repeat until mixture resembles a sno-cone.
  • Taste juice before freezing. For a less sweet granita, thin with water. Or add honey for more sweetness.
  • Optimal flavors include melons, citrus or berries. You can include herbs such as mint, basil or lemon balm.
